Lumpia (Mom’s Spring Rolls)

My mom was taught how to make lumpia by her good friend and neighbor. It quickly became a family favorite growing up.  I would have loved to have it every night but now it’s a once in a blue moon treat. She altered this a bit by adding shredded carrots to please her kid’s tastes.

Ingredients

  • 1 lb hamburger
  • 1 large onion, grated
  • 2 potatoes, grated
  • 2 carrots, shredded (you can also try cabbage)
  • Spring roll sheets
  • Salt and pepper to taste

Instructions

Brown hamburger, making sure it is in fine pieces. Mix in all ingredients with salt and pepper to taste. Place diagonally on spring roll sheets, fold and fry on medium high heat until golden brown on both sides. Serve with your favorite sauce (as a kid I loved it with ketchup but I’m sure that was so not right).
